Homemade Fancy Fish Tacos
If you are a taco fanatic like most Americans, then you know the best ones derive from Mexico or Texas (the original street taco). Despite the infinite amount of creative tacos out there, the original “Street Taco” consist of protein (chicken, steak, or pork), cilantro leaves, and chopped onions wrapped in two corn tortillas. Ordinarily $1 and served with salsa verde (green) packaged in a plastic container or baggy.
Today we pay homage to the Mexican creation with a simple yet costly fish taco. Fortunately you will not have to travel to Mexico to buy these fancy fish favorites, they can be made right at home. The downside is they will cost you more than just a buck.
Fancy Fish Tacos
Baked Mahi Mahi in Lime butter
Topped with a Grape seed oil, chopped Cilantro, Shallots, and Garlic (optional) mix
Wrapped in two Crispy Corn Tortillas
Served with a Homemade Spicy Salsa Verde on side(recipe below)
Homemade Spicy Salsa Verde
1/2 lb tomatillo (cut in quarters)
1 Serrano pepper
1 Jalapeno pepper
1 Small red onion (cut in half)
2 garlic cloves
1 Lime (squeezed of all juice)
2 cups of fresh cilantro
1 cup of fresh parsley
- Roast tomatillos, peppers (seeds and all), shallot, and garlic together in Oven on 400 degrees for 20 – 30 minutes or until tomatillos become tender and peppers began to brown and also tender
- Blend All ingredients while hot together (Be sure to use all the juices created from roasted ingredients at bottom of pan)
- Salt to taste
- Served chilled
