Kale Salad at The Boathouse at Rocket’s Landing in Richmond, VA
Though I now eat a primarily vegetarian diet, I have never characterized myself as a “salad person.” Considering this fact, and also that this site varies widely in its features, I acknowledge that it may, in fact, be a little weird to feature a salad on You Gotta Eat This. This salad, however, was one of the most delicious and filling salads I have ever eaten.
The Boathouse at Rocket’s Landing is a well-known and well-liked in the Richmond area. Not only does it provide an amazing view of the James River, through the walls of windows and on the balcony, but the food and service are terrific as well. If you weren’t sure if you’d like it there, it certainly doesn’t hurt that according to the website, The Boathouse “is committed to providing food from local, sustainable stock, harvested by methods that do not harm the environment.”
When we made reservations for a friend’s birthday lunch, we knew that we would have a nice time visiting, catching up, and, of course, eating. What I didn’t expect was the number of options with which we were presented. Being both gluten-free and meatless, sometimes eating out can be a challenge for me. Fortunately, there were a few things on the Boathouse menu that looked amazing. After deliberating over my options, I decided on the Emerald Kale Salad.
The menu names the following as the ingredients of the Emerald Salad: emerald kale and red cabbage, dried cranberries, pistachios, carrots, and miso vinaigrette. I had never tasted the combination of pistachios and cranberries before; it worked–it worked very well! The miso vinaigrette was light and tasty. It enhanced the crunch of the cabbage and carrots. Overall, I can’t say enough about how filling and delicious this salad is. It was both mouthwatering and delicious.
If you are in the RVA area and want a nice, beautiful, and relaxing restaurant, you should consider the Boathouse at Rocket’s Landing. If you go, get the Emerald Kale Salad.
