#QUARANTINEMEALS | Volume 3

Welcome back once again to #QuarantineMeals. I’ll tell you what, spending all this time with a person or people and not being able to be out and about can drive you a little crazy and trust me it has! But no matter who you’ve had to ride out the stay at home order with, I hope you’ve all had a chance to bond together even more. 

If you had the opportunity to spend this quarantine with your family (like I have) I hope you’ve created some quality time together and done some family activities. I’ve seen families have themed dinner parties, beer pong showdowns and create hilarious TikTok videos! I also hope you’ve had a chance to cook some delicious meals together, like we have! 

Spending time in the kitchen, helping each other out with the ingredients, creating delicious food and being able to enjoy the meals together has truly been a blessing. Although I miss socializing with my friends and with the rest of the world, it has been nice to chop it up with the fam-bam and create some amazing food.

This week we keep cheesy as we created some Lasagna, Enchiladas and some Ground Turkey Tacos! Easy to make meals to keep you and the family entertained! 

Next week we’ll have some more special dishes AND introduce our first round of featured recipes created by YOU! Yes, a few of the homies actually submitted some recipes. Lol. Delicious ones at that. Until then we hope you enjoy this week’s edition of #QuarantineMeals.

#QUARANTINEMEALS

Homemade Lasagna

Serving size | 2 – 4 people

Ingredients:

  • 2 lbs Ground Beef (or Ground Turkey as substitute)
  • 2 Stocks of Celery
  • 1 Bell Pepper
  • 1/2 Onion
  • 3 Garlic Cloves
  • 1 Carrot (shaved)
  • 1 bag of frozen spinach 
  • 1 Bag Mozzarella Cheese (2.5oz)
  • 1 Bottle of Organic Marinara Sauce (32oz)
  • 2 tbl Italian Seasoning
  • Pinch of Salt & Pepper
  • 1 packet of Lasagna Pasta

Directions:

  1. Chop celery, bell pepper and onion.
  2. Shave carrots.
  3. Crush garlic cloves.
  4. Cook ground turkey until brown.
  5. Add celery, bell pepper, onion, carrot, garlic cloves, italian seasoning, salt & pepper.
  6. Add thawed spinach. 
  7. Cook pasta according to directions.
  8. Once pasta is cooked – start layering of lasagna with veggies and cheese.
  9. First layer – spread lasagna, coat with marinara sauce, add mix of veggies and topped with cheese. 
  10. Repeat until all filling is used.
  11. Bake lasagna at 375 degrees for 25 mins. 
  12. EAT! 

#QUARANTINEMEALS

Green Sauce Enchiladas Casserole 

Serving size | 2 – 4 people

Ingredients:

  • 2 lbs Chicken
  • 1 Bell Pepper
  • 1/2 Onion
  • 2 Garlic Cloves (crushed)
  • 1 Big can of Green Sauce
  • 4 Cups Mozzarella Cheese
  • 28 tortillas.

Directions:

  1. Shred chicken.
  2. Saute onions, bell pepper and garlic.
  3. Add chicken and cook for 7 mins.
  4. Warm up tortillas until soft.
  5. Dip tortilla into green sauce.
  6. Add chicken filling and roll tortilla.
  7. Place in a casserole.
  8. Repeat steps 4 through 7 until all of the tortillas are used.
  9. Pour the remaining amount of sauce over the entire casserole.
  10. Sprinkle cheese over the entire casserole. 
  11. Bake until the cheese melts.
  12. Serve and add toppings of your choice (sour cream, avocados, tomato, etc.)

#QUARANTINEMEALS

Ground Turkey Tacos

Serving size | 2 – 4 people

Ingredients:

  • Ground Turkey
  • Green Bell Pepper
  • White Onion
  • Tomato Sauce (2 tablespoons)
  • Taco Seasoning (1/8 cup)

Directions:

  1. Cook ground Turkey with season until the meat is brown. While cooking add 1tbls of white wine.
  2. Once meat is brown add white onion & bell pepper until cooked.
  3. Add tomato sauce and mix with ground Turkey.

Guacamole:

  • 2 Avocados
  • 1 Tomato
  • White onion (1 tbls)
  • Cilantro (1tbls)
  • Garlic salt
  • Lemon

Directions:

  1. Chop everything and mix it all together!
