[RECIPE]: Roasted Red Pepper Sauce with Gemelli and Sauteed Shrimp

Gemelli means twins in Italian. But there is an even better meaning for the word…tasty! They are the “unicorn horns” of pasta and are perfectly dense and soft at the same time, literally standing up to any sauce that it accompanies. I used the noodle in this dish to complete my roasted red pepper sauce, which is an excellent substitute for the traditional marinara sauce. Easy peasy people!

Easy weeknight dinner!
Ingredients
  • [Red Pepper Sauce]
  • 1 lb gemelli pasta, cooked al dente
  • 3 roasted red bell peppers, seeded and chopped
  • 2 tbsp EVOO
  • 6 oz carrot, diced
  • 8 oz onion, diced
  • 3 garlic cloves, chopped
  • 2 tbsp fresh parmesan, grated
  • Salt and Pepper, to taste
  • [Sautéed Shrimp]
  • 1 lb large shrimp, peeled and deveined
  • 2 tbsp butter
  • 2 tbsp EVOO
  • 2 cloves garlic, chopped
  • 1 tsp crushed red pepper
  • Salt and Pepper, to taste
Instructions
  1. Cook the pasta to al dente (according to the package directions) and set to the side.**(Note: Do not rinse the pasta…the sauce will coat the pasta better.)**
  2. Roast your bell peppers on a half sheet in the oven under the broiler until charred on all sides.
  3. Remove from the oven and place in a paper bag (fold down the top) to sweat it for about 10 minutes.
  4. Take out of the bag and peel off the outer charred skin. Seed and rough chop the pepper. 5. Place in a food processor or blender.
  5. Heat a sauté pan on medium heat.
  6. Add the EVOO and then add the carrot, onion and garlic. Sauté until the vegetables are soft, about 3-5 minutes.
  7. Add the vegetable mixture to the food processor with the bell pepper. Blend for 20-30 seconds. Set aside.
  8. For the shrimp, heat the sauté pan on medium heat then add the butter and EVOO.
  9. Add the garlic and crushed red pepper and sauté for 1 minute (don’t let the garlic burn). 11. Add the shrimp and cook until the shrimp are in the shape of a “C” (cooked) not an “O” (overcooked). Remove from the pan and set aside.
  10. Wipe out the sauté pan and return the blended mixture to sauté pan, add parmesan and salt and pepper to taste.
  11. Simmer for 5-7 minutes to allow flavors to combine.
  12. Toss with the cooked gemelli and top with 3-4 shrimp per serving. Enjoy!
