Every once in a while you come across something in your life that you would refer to as a “game changer”. Now this is not an everyday occurrence nor is it Haley’s comet rare, but when it happens you are fully aware of it. Allow me to tell you about one of my “game changer” moments. Living in Houston I am fortunate enough to be in what we consider the food capital of the USA. Houston has so many diverse and unique restaurants, even more so with food trucks that sometimes we get spoiled and don’t truly get to take advantage of this. Luckily for me my girlfriend took me to Fat Bao.

Now let me tell you that the name is a bit odd but strangely enough, fitting. What is a Bao? Well I’m glad you asked!! A bāozi or simply known as bao, bau, humbow, nunu, bausak, pow or pau is a type of steamed, filled bun or bread-like (i.e. made with yeast) item in various Chinese cuisines, as there is much variation as to the fillings and the preparations. In its bun-like aspect it is very similar to the traditional Chinese mantou. It can be filled with meat and/or vegetarian fillings. Thank you Wikipedia; now imagine that but with no stuffing. Instead use the Bao as a tortilla like when making a taco and BAM you have a Fat Bao.

The selection ranges from Peking Duck (a must have) to Bulgogi and even Tofu for my vegetarian peeps out there!! They also have delicious finger foods with a twist such as the Spicey Edomame and Fat Fries (Another must have) in case you feel like a quick appetizer. What caught me off guard were the selection of beverages from alcoholic to nonalcoholic ones! They import Ramune, a Japanese carbonated drink, and Mexican Coca-Cola.

Their beer selection is quite impressive as well, kudos for stocking up on the local gem St. Arnold’s Icon beer.

Not into any of that beer? That’s okay because their complimentary cucumber infused water is amazing!

Now if you are fortunate enough to stop by Monday or Tuesday after 5pm you are in for a special treat, RAMEN!! Their ramen is one of the best I have tasted in Houston so far and the rush of patrons during that time agrees.

This place was so good I had to go back the very next day with a few good friends, including the food connoisseur himself Bun B the Trill OG. I was fortunate enough to be there right before 5 so their ramen was in my sights and yes it was every bit and more than I had hoped for. Now I was stuffed but still wanting to get the complete “Fat” experience dessert was next. Kadoma decided to order the PB&J on a fried Bao and it was the next evolution in PB&J sandwiches. I opted for what Bird, one of the coolest hosts, suggested. Dark Chocolate Sriracha Ice-cream!!! Let me tell you that this was a one of a kind taste of sweet and spicy, A MUST HAVE!
