Banana Bars with Cream Cheese Frosting

My coworker’s birthday was on Monday and I surprised her with these amazing bars!

I knew she liked banana desserts so I looked on Pinterest until I found this recipe. I changed it up a little bit, but it came out delicious.

These were a big hit at the office. I recommend this recipe to anyone trying to “wow” their friends.

Banana Bars with Cream Cheese Frosting
Ingredients
  • 1 stick of butter, softened
  • 1½ cups white sugar
  • 2 eggs
  • 1 cup plain greek yogurt
  • 1 tsp vanilla
  • 2 cups flour
  • 1 tsp baking soda
  • ¼ tsp salt
  • cinnamon
  • 4 ripe bananas, mashed
  • For the frosting:
  • 1 stick of butter, softened
  • 8 oz package of cream cheese
  • 1-3 cups powdered sugar (however sweet you like it)
  • 2 tsp vanilla
  • cinnamon
Instructions
  1. Preheat oven to 350 F and grease a 9x13 pan AND a 9x9 (or 8x8). The recipe called for a 10x15 jellyroll pan which I did not have.
  2. In a large bowl, mix the butter and sugar until creamy.
  3. Next, beat in eggs one at at time. Then add yogurt and vanilla.
  4. In a separate bowl combine, flour, baking soda, salt, and cinnamon. I didn't measure how much cinnamon I added since it was a last minute decision.
  5. In small batches mix in the dry mix to the wet mix.
  6. Finally, add in the bananas, mix, and then spread evenly into the pans.
  7. Bake for 25-30 minutes or until a toothpick comes out clean.
  8. Frosting:
  9. Mix butter, cream cheese, vanilla. Add in powdered sugar until you reach the sweetness you want. I also added cinnamon to the frosting. Just use however much you like:)
  10. Wait until bars are cool before you frost them. I waited about 30-35 minutes.
Notes
Be sure to put the bars in the fridge if they've been out too long! They taste great cold as well, but even better zapped in the microwave for 15 sec. 🙂
