Quinoa Salad with Raspberry Vinaigrette by Fabulous Faith

Quinoa that’s that bourgeois stuff right? You must of heard this magic stuff by now!

It’s like that on fleek grain thing your conscious or yoga obsessed friend is always snacking on and yet you still haven’t bothered to try it! Why though, it doesn’t look that weird like most health food.

You might be surprised quinoa tastes really good if you would just try, and best of all what they haven’t told you is this grain is a fruit, yes a FRUIT and you gotta eat fruit right?

If you’re not sold by now then you’re obviously living in a dark hole. Why? because if in near 2015, you don’t know that eating white rice, flour and sugar (while deliciously tantalizing) will NOT make you look or feel good. And you wanna look good right? Well squeezing into that medieval corset and squatting til your legs are wobbly just won`t do it.  The reality is eating well is exactly what will make those precious filters of your unnecessary.

So put on a big pot of water and break-out the quinoa, cause it’s about to go down.

 

Quinoa Salad with Raspberry Vinaigrette

Quinoa

Ingredient:

1 cup Quinoa (organic preferably)

Instructions:

Bring around 4 Liters (A Gallon or so) of water to boil, add the quinoa and a pinch of salt.

Let it swim around until you can see the white edges and clear circle around the middle (around 20 minutes)

Drain and toss with ¼ cup Kraft raspberry vinaigrette

Set aside to cool

 

Salad

Ingredients:

½ small red onion halved and thinly sliced

½ cup julienned sweet pepper (red, orange or yellow your choice)

½ cup crumbled feta cheese

½ cup edamame (cooked and shelled)

1/4 cup grated carrot

1 can tuna (drained) or a can of chick peas if you are vegan

¼ cup Kraft raspberry vinaigrette

Instructions:

Toss all the ingredients together with the quinoa once it’s cooled and served immediately or refrigerate until serving.

Recipe yields two large or four small servings.
