Copycat Recipe – Olive Garden’s Zuppa Toscana.

Back in the day my family and I went to the Olive Garden quite a bit. I’m not a huge fan of them now, but I’ve always loved their Zuppa Toscana soup! I searched online and looked at so many copycat recipes, until I stumbled upon this one. And it was amazing.

So, if you want to enjoy every delicious drop of that soup, but would rather not go or be seen at the Olive Garden, then this recipe is definitely one to keep in your rotation.

Copycat Recipe - Olive Garden's Zuppa Toscana.
Ingredients
  • 1 lb Italian sausage
  • ½-1 tsp of red pepper flakes (I used 2+ tsp)
  • 3 large russet potatoes, sliced on the thin side and cut into halves or quarters
  • 1 large onion, diced
  • 4 slices of bacon, chopped ( I used 6 slices obviously)
  • 3 garlic cloves, minced
  • 3 cups kale, chopped
  • 2 boxes (32 oz each) chicken broth
  • 2 cups water
  • 1½ cups heavy whipping cream
  • pepper
Instructions
  1. Saute Italian sausage and crushed red pepper in pot. Drain and set aside.
  2. In same pan saute bacon. When halfway through cooking, add in onions and garlic. Cook for 15 minutes or until the onions are soft.
  3. Add the chicken stock and water. Bring to a boil.
  4. Add potatoes and cook until soft. About 15-20 minutes.
  5. Add heavy cream and the cooked sausage. Cook until heated through.
  6. Add in pepper and kale. Let kale cook for 5 min to wilt a bit.
  7. Enjoy!
