Pumpkin Chocolate Chip Cookies

Ingredients
  • 1 cup pumpkin puree
  • 1 cup white sugar
  • ½ cup vegetable oil
  • 1 egg
  • 2 cups flour (I used whole wheat)
  • 2 teaspoons of baking powder
  • 2 teaspoons of pumpkin pie spice
  • ½ teaspoon salt
  • 1 teaspoon baking soda
  • 1 teaspoon milk (I used almond milk)
  • 1 tablespoon of vanilla extract
  • 2 cups chocolate chips (I used dark chocolate)
Instructions
  1. Preheat oven to 350 F. Grease a cookie sheet.
  2. Combine pumpkin, egg, oil, and sugar. Mix well.
  3. In a separate bowl mix flour, baking soda, baking powder, pumpkin pie spice and salt. Mix well. Then add milk and vanilla extract.
  4. In batches, mix the flour mixture into the wet mixture. Add in chocolate chips.
  5. Drop spoon size dough balls onto the greased cookie sheet.
  6. Bake for 8-12 minutes.
Notes
When I first made this I accidentally used a whole can of pumpkin puree instead of just one cup. It worked out in the end, but the cooking time was much longer.
