- Sweet Potato Cheesecake with Caramel Pistachio Glaze
Crust: Gram cracker 1 pack ( crushed cinnamon flavor) , 1/2 teaspoon cinnamon and ginger, 1/2 cup of white sugar
Sweet potato/cheesecake mixture: Boiled and peeled sweet potatoes, 1/2 cup of butter, a dash of nutmeg, 1 teaspoon of cinnamon, one beaten egg, 1 pack of plain cream cheese and 1 cup of sugar
Cooking directions: Set the oven to 350,pre-bake the crust mixture for ten minutes. Blend the sweet potato mixture thoroughly. Pour the mixture into the baking dish over the crust. Bake for 35 minutes, left the cheesecake cool for 25 minutes then place the pie in the refrigerator over night. The caramel glaze and pistachios are optional…have fun add pecans ….have fun
