
Crockpot Chicken Quinoa Chili
I had a few chicken breasts I needed to use so of course I hopped onto Pinterest for recipe inspiration. I stumbled upon this recipe and fell in love at first taste. I followed the recipe exactly except adding in some water. This recipe would be perfect for a cold winter night, but it also wasn’t so bad on a cloudy summer day.
Ingredients:
2 chicken breasts (thawed)
1 can of black beans, drained and rinsed
1 can diced tomatoes
1 small can of tomato paste
1/2 cup uncooked quinoa, rinsed
1/2 cup corn (I used frozen)
1 cup chicken broth
1/2 cup water
2 tsp chili powder
2 tsp onion powder
2 tsp garlic powder
2 tsp paprika
Yogurt (optional)
Avocado (optional)
Directions:
Throw everything into a crockpot except the yogurt and avocado
Cook on high 4-6 hours or low 6-8 (I cooked on low)
(After it was cooking for 5 hours I took the chicken out, shredded it, and cooked it some more)
Top each serving with some greek yogurt and avocado slices.
P.S. – the yogurt and avocado really make this dish amazing!
